燕窝的贵贱与好坏之分在于六大指标:产地、发头、完整程度、清洁品质、口感、含水率。


一、产地:


印尼燕窝占全球燕窝总产量的80%,马来西亚13%,泰国5%,越南2%,我国产燕窝之地有三:广东肇庆市怀集县燕岩、云南红河州建水县燕子洞、海南大洲岛(已封岛保护)。由于靠近北回归线,采燕窝有很强的季节性,产量稀少,总量不及全球燕窝产量万分之一。


二、发头:


“发头”按重量计算,燕窝在浸透后,在重量上与干身时的差异,倍数越大,即“发头”越好,一般优质燕窝有6至8倍的“发头”(如果在常温常湿下,自然干燥,燕窝的“发头”在12倍以上,发头达到12倍以上,才是极品燕窝)。


三、完整程度:


采摘下的燕窝除毛清洁外,既要保持燕窝清洁、又要保持燕窝的完整程度,这也是需要有一定工艺技术的。优质特等燕盏只挑选头生燕盏,完整饱满,纹理密实,色泽晶莹,是优质生活艺术的极致享受。




四、清洁品质:


如果没有仔细清洁过的燕窝,无论燕盏、燕条、燕网、燕角、燕碎等等都是有燕毛的,可能还有蛋壳、甲虫等杂质。因此,天然清洁的燕窝,也是好燕窝的指标之一。


五、口感:


优质燕窝口感细腻爽滑,炖燕窝的水如有粘性,则往往是涂过胶或加过增稠剂。另外,不同等级品种的燕窝有不同的口感:特等燕盏Q滑柔顺、极致享受;燕网是燕窝中间“安燕”部份,是支撑蛋只及小燕的纤细网状物,口感细腻润滑,较容易消化吸收。燕角是金丝燕用来固定燕窝两端部份,是燕窝的“承重梁”,浓厚爽口有嚼头,所需炖煮时间也较长,是燕窝营养的集中部份。


六、含水率:


市场有很多含水率很高的燕窝,这种燕窝价格极其便宜,鱼龙混杂,真燕窝的含水率最高也可达40-60%,即使放入木盒或防潮箱内储存仍会变质;而优质燕窝即使不放在木盒内储存也是不会产生霉变的。



冰糖燕窝的做法:

                              


原料:燕窝250克、樱桃25克。

1、将水发的燕窝放在小盆里,干燕窝放清水中浸泡三、四小时后去毛,除去杂质后,用沸水稍泡,捞出放入凉水中浸之四小时。

2、最后经沸水锅氽一下,捞起即成,用温水冲泡后,滗去原汁,再用温开水冲泡,滗去原汁。甜樱桃切片。

3、将冰糖加清水500克入锅,微火煮至糖化汁粘时,用纱布滤去杂质,然后将净糖汁150克,冲入燕窝的小盆里。

4、滗去糖汁,再将剩余的净糖汁冲入燕窝,上笼屉用旺火蒸五分钟取出,撒上樱桃片即成。


孕妇在怀孕开始食用燕窝
